About Pinnock Distillery
Pinnock Distillery is a small-batch gin distillery located at the Castle at Edgehill, overlooking the Civil War battlefield in Warwickshire. The distillery takes its name from the cottage where the gin was originally produced and launched in 2018. It has since relocated to the Grade II listed Radway Tower, where visitors to the distillery and Castle Gin School can enjoy views across four counties. Pinnock produces a Warwickshire Dry Gin using locally sourced honey, lavender and quince, combined with juniper, coriander, angelica, cassia, cardamom seeds, orange peel and cubeb pepper. The distillery also makes award-winning Rhubarb and Strawberry, and Sloe, Damson and Honey blends, using locally sourced fruit and berries. All spirits are produced, bottled, labelled and wax-sealed by hand using a traditional 40L copper alembic still. The gins have received recognition from both Great Taste and IWSC awards. In 2022, Pinnock Distillery partnered with The Castle at Edgehill to establish the Castle Gin School, where visitors can learn about distillation and try the full range of spirits. Shorter taster sessions are also available. The distillery runs an online shop with free local delivery.
